Ukrainian-American sculptor Vasily Fedorouk created a lot of artwork depicting a human figure with an animal.  Here the composition is the God Apollo riding a dolphin.  The stone carving is topped off with an actual GOLD cap on the deity's head.

Since arms would have slowed the energy of the dolphin's plunge downwards while the male figure looks towards the heavens (a common motif in Vasily's works), he left them off.  I remember learning a similar lesson while studying sculpture at the Elisabet Ney Sculpture Conservatory in Austin, Texas.  But mostly, I remember Vasily's advice to me:  "Design the line that you want and then make everything else support that."

~ Kelly Borsheim writes on behalf of Ukrainian-American sculptor Vasily Fedorouk.
